Summer Dining at Rinuccini

Kilkenny has a very Italian feel to it these days thanks to soaring temperatures. Chef Antonio has created a wonderful summer menu, using the best of seasonal fresh Irish produce along with classic Italian ingredients.  

Highlights include favourites such as the Involtini di Melanzane, rolls of aubergines stuffed with ricotta cheese and sundried tomatoes and baked in a fresh tomato sauce and our Seared Kilmore Quay Scallops served on a bed of fresh green pea risotto. A stand out dish is Chef Antonio’s Fresh Kilmore Quay Black Sole with white wine, lemon and garlic. Simple but cooked perfectly. Our Linguine all’Astice is simply homemade egg linguine, topped with Kilmore Quay Lobster, garlic white wine and Siclian Pachino tomatoes.

The menu culminates with classic Italian Dolci, including Cannoli Siciliani, a signature Sicilian dessert of crisp homemade biscuit filled with a creamy ricotta and flavourted with almonds, sultanas, candied fruits, orange zest and Marsala wine. We’re counting the days until Kilkenny raspberries are at their best and our Sorpresa di Frutta Fesca restuns to the menu. Made using fresh raspberries from Purcell’s Farm in Dunmore, topped with vanilla ice cream and smothererd in a warm zabaglione cream, it is in high demand during the summer months.
